High-Protein Banana Bread

Y’hello Beasties! Previously, we made a delicious, moist banana bread. Well, we’re at it again. Except this time, I am bringing to you a flourless banana bread recipe. Flourless as in, no flour? Yes! This means that is safe for you my beasties with gluten allergies!

But this is not all. This banana bread is also packed with lots of protein and low in carbs and sugar, which makes it perfect for you to hit your macros without sacrificing anything.

How did I achieve such a result, you may ask. I simply created this beautiful collaboration between my two favorite supplement brands: Quest Nutrition and MuscleTech. But let’s jump on the recipe before anything else.

YOU WILL NEED

Coconut oil (instead of butter, this is what I use), mixing bowls and a loaf pan.

INGREDIENTS

For 12 servings (1 slice per serving):

INSTRUCTIONS

  • Preheat the oven to 425ºF. Grease the loaf pan. (I use an 8.9 long × 3.7 wide × 2.5 inch deep silicon one.)

  • In a mixing bowl, whisk together peanut butter powder, protein powder, baking soda, and salt. Set aside for now. We’ll call this, “mix 1”.

  • In the second mixing bowl, mash the bananas with a fork until you have a chunky applesauce texture. Add in the coconut oil as you continue mixing. Top this batter with the eggs and continue mixing until well blended.

  • Gently add mix 1 to the batter and continue to whisk until you have a creamy texture. Complete with the vanilla extra.

  • Pour into the prepared loaf pan and bake at 425ºF for 8-10 minutes. Then reduce the heat to 350ºF and continue baking for another 20-35 minutes, or until a toothpick inserted into the center comes out clean.

  • Let the banana bread rest for about 10 minutes before transferring on another surface to cool.

  • Slice and serve. Bon appetit!

THINGS TO KEEP IN MIND

The riper the bananas, the sweeter they are. In this recipe, I chose to add no sugar.

Protein powder dries up really fast. So, it is very important to up the wet ingredients as necessary. Also, you want to check the oven more often to make sure that your banana bread does not burn, as it will cook in a shorter amount of time than if there was no protein powder involved.
