INSTRUCTIONS
  1. Bring a large pot of salted water to a boil. This will be for your noodles.
  2. While waiting, wash and prepare your produce. Trim and thinly slice the scallions, keeping whites and greens separate. Mince or grate the garlic.
  3. In a medium pot, heat a drizzle of oil over high heat. Add coleslaw mix and stir constantly until it’s lightly charred, about 1-2 minutes. Transfer to a plate.
  4. In the same pot, add a bit more oil over medium-high heat. Toss in scallion whites and garlic, cooking until fragrant (20-30 seconds).
  5. Next, add the pork, half the sesame seeds, and a pinch of salt. Cook for 5-7 minutes until the pork is browned.
  6. Stir in Szechuan paste and peanut butter until everything’s well combined and lightly browned (1-2 minutes). Then, add the stock concentrates and water and bring to boil.
  7. Once boiling, reduce the heat to low and let it simmer until slightly thickened (2-4 minutes).
  8. By now, your water should be boiling. Add the noodles, cooking until tender (1-2 minutes). Drain and rinse under cold water.
  9. Divide the noodles into bowls, pour the broth over, top with charred cabbage, and garnish with scallion greens, remaining sesame seeds, and chili flakes.

Alternative Proteins and Vegan Options

If you’re looking to switch things up, consider alternative proteins! Ground pork is delicious, but what if you’re opting for a healthier or plant-based choice? Here are some great alternatives:

  • Tofu: Firm tofu soaks up flavors wonderfully. It’s high in protein and can be marinated to enhance the taste.
  • Seitan: Known as wheat meat, seitan is packed with protein and has a texture akin to meat, perfect for replicating that savory bite.
  • Chickpeas: Not only do they add nutty flavors, but they also provide fiber and protein. Try roasting them for a crunchier texture.
Suggestions for Side Dishes to Complement Your Meal

Your ramen can shine, but don’t forget about the side dishes! Here are some fantastic options that can elevate your dining experience:

  • Chinese Broccoli Stir-Fry: Simply sauté with garlic and oyster sauce. This adds a delicious crunch.
  • Spring Rolls: Fresh or fried, these can introduce different textures and flavors to balance your noodles.
  • Pickled Vegetables: These add acidity, which can cut through the richness of the broth.
