INGREDIENTS:
- 1 zucchini, halved and thinly sliced
- 1 tablespoon Italian seasoning, divided
- 9 ounces ground chicken or turkey sausage
- 6 ounces spaghetti
- 1 (14.5-ounce) can crushed tomatoes
- 1 Tbsp chicken broth concentrate
- 2 Tbsp sour cream
- ¼ cup grated Parmesan cheese
- 1 Tbsp coconut oil (olive oil is fine)
- 1 tsp sugar
- 1 tbsp butter (I use coconut oil instead)
Salt and pepper, to taste
INSTRUCTIONS:
Preheat the broiler to high (425ºF is good enough).
Bring a large pot of salted water to a boil.
Meanwhile, toss the zucchini with the coconut oil, half of the Italian seasoning, salt, and pepper on a baking sheet. Broil for 5-7 minutes, or until browned and softened.
Heat olive oil in a large pan over medium-high heat and cook sausage, breaking up meat into pieces, until browned and cooked through.
Once the water is boiling, add spaghetti and cook for 9-11 minutes, or until al dente. HelloFresh calls for reserving ½ cup pasta cooking water before draining and setting aside pasta but we’re not doing that. Discard of that water entirely.
In the pan with the sausage, stir in crushed tomatoes, chicken broth concentrate, and sugar. Season with salt and pepper, and bring to a simmer for 5-7 minutes. You can add your choice of spices here too, if you’d like.
Stir sour cream and butter into the pan with the sauce until melted and combined. Then, add drained spaghetti and zucchini and toss to coat. If your pan is not large enough, pour everything into the empty pasta pot.
If necessary, add in some water, 1 tablespoon at a time, until the pasta is thoroughly coated in sauce. Season with salt and pepper to taste.
Divide pasta between bowls, sprinkle with Parmesan cheese, and serve.

This recipe calls for 2 servings. Obviously I devised it further, into 6 overall. Also, because I slightly edited this recipe, the nutrition fact numbers are lesser than what HelloFresh calls for. So, please, as always, don’t take these numbers to heart as they’re always estimates.

Tips:
- For a vegetarian option, use ground tempeh or lentils instead of sausage.
- If you don’t have chicken broth concentrate, you can use 1 teaspoon of bouillon powder or 1 cup of low-sodium chicken broth.
- You can also add other vegetables to this recipe, such as chopped carrots, celery, or onions.
