Baked Hoisin Glazed Salmon w/ Zucchini

Today, we’re whipping up a dish that’s as delicious as it is simple—Baked Glazed Salmon with Zucchini. This meal is a protein-packed, flavor-loaded, meal-prep-friendly gem that’ll have your taste buds doing a happy dance. Plus, it’s got that sweet and savory glaze action that makes salmon downright irresistible.

WHAT YOU NEED 
  • 24 oz Farm-Raised Atlantic Salmon (Four 6-oz fillets)
  • 8 cups Zucchini, chopped
  • 1 medium Red Onion, sliced
  • 1 tbsp Hoisin Sauce
  • 4 tbsp Light Soy Sauce
  • 8 tsp Pure Cane Sugar
  • 4 Lime (cut in 4 wedges for serving)
  • Salt and pepper for taste*.


*Feel free to use more/different seasonings. I personally do, as I find salt and pepper alone too bland for my taste buds.

INSTRUCTIONS 
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Sauté the onions in a pan over medium heat until they’re slightly caramelized. Place them on the baking sheet as a cozy bed for the salmon.

  3. Mix the glaze by combining hoisin sauce, soy sauce, and sugar in a bowl.

  4. Coat the salmon fillets generously with the glaze, then lay them on top of the onions.

  5. Bake for 12–15 minutes, or until the salmon flakes easily with a fork. If you like a bit of char, broil for the last 2 minutes.

  6. Steam the zucchini in the microwave: Place it in a microwave-safe bowl, cover with a damp paper towel, and microwave for 2–3 minutes until tender but still crisp.

  7. Serve it up! Plate the salmon with steamed zucchini, squeeze fresh lime over everything, and dig in!
