It was a chilly evening, and my taste buds were ready for a flavor explosion. A Sweet ‘n’ Spicy Apricot Pork Chop dish came to my rescue, marrying the sweetness of apricot jam with spicy Sriracha in a way that felt like it was made just for me. And I am not even into spicy foods. But from that night on, I knew dinner would never be boring again!
YOU WILL NEED
- 10 oz pork chop
- 8 oz broccoli
- 12 oz carrots
- 12 ml Ponzu sauce
- 1 tsp Sriracha
- 1 tsp garlic powder
- 1 tsp Korean chili flakes
- 2 units scallions
- 1 unit apricot jam
- salt*
- pepper*
- butter or your type of oil**
- cooking oil**
INSTRUCTIONS
- Preheat oven to 425°F and position the rack at the top. Wash and dry produce. Peel and slice carrots into ½-inch pieces (halve large ones lengthwise). Toss with oil, chili flakes (to taste), and salt on one side of a baking sheet. Roast for 5 minutes.
Cut broccoli into bite-sized pieces if needed. Thinly slice scallions, keeping whites and greens separate.
Pat pork dry and season with salt and pepper. Heat oil in a large pan over medium-high. Cook pork until browned and cooked through, 4-6 minutes per side. Transfer to a cutting board, tent with foil, and let rest. Wipe out the pan.
After 5 minutes, toss broccoli on the other side of the sheet with oil, garlic powder, salt, and pepper. Roast on the top rack until browned and tender, 15-20 minutes.
As veggies finish roasting, heat oil in the same pan over medium. Sauté scallion whites until fragrant, about 1 minute. Stir in jam, ponzu, Sriracha, and ¼ cup water. Cook until thickened, 1-3 minutes, adding water 1 tsp at a time if needed. Remove from heat, stir in 1 TBSP butter, and season with salt and pepper.
Slice pork crosswise and plate with veggies. Drizzle sauce over the pork and garnish with scallion greens. Serve. Ensure pork reaches an internal temperature of 145°F.
